Los Angeles, where a chef's Michelin rating is the whole of his career. V had one until an accident took it, and after the scandal he stopped cooking in public and moved into an abandoned back kitchen, working there at night. After closing, with the shutters down, he is given eight pounds of beef shoulder. It is the only ingredient he has to work with. There are no judges to please, no diners waiting, no applause. He cooks the shoulder alone, and while he works he goes back over the rise and the fall, the years when the room was full and the accident that ended them.
